Oven Baked Mini Egg Muffins

How to make breakfast with a toddler? It has to be easy, healthy, yummy and with limited danger lol. This is a fav recipe of mine to do with B. I love this because I don’t need to hang in the kitchen forever.

For this, you just get some easy ingredients you prefer in your omelette. I chose ham, spinach, onions,  cheese and turkey.

In a frying pan I put a some turkey or ham in with some onions and spinach to get started. I just warm it up a bit.

Fill the muffin tins with your cooked ingredients.

Set aside while you mix your 8 eggs in a large container.

Add a quarter cup of milk. I used almond milk. Whatever you prefer works.

Add 1/2 teaspoon of olive oil and 1/2 teaspoon of baking powder. Season with some salt and pepper.

Whisk all together

Add some shredded cheese over the cooked ingredients and pour your egg mixture over the top.

You want to fill each cup enough to cover your ingredients.

Preheat oven to 375 degrees. Toss the muffin tin in the oven, set it for 20-25 minutes and Boom you’re done. In just minutes you’ll have fluffy egg muffins. Leave in the pan for 5 minutes to cool off so you can easily take them out. Hope you enjoy them as much as we do.

      The baking powder helps it be fluffy. Not sure what the milk does. I want to try it without the milk. I’ll let you know if it tastes good.
